Compressed Watermelon & Feta Salad

A light and refreshing dish paired with our gourmet products – perfect for a warm summer day!

 

1 Seedless Watermelon

1 Cucumber (Diced Medium)

½ Cup Feta Cheese

1 Cup Baby Arugula

1 Red Onion (Thinly Sliced)

2 Tbsp Round Pond Red Wine Vinegar

¼ Cup Round Pond Estate Meyer Lemon Olive Oil

1-2 Tbsp Round Pond 13 Year Aged Balsamic

Salt/Pepper to Taste

 

Directions:

  1. Cut watermelon into small cubes. Vacuum seal to compress all the air out. Set aside.
  2. In a small bowl, mix together olive oil, red wine vinegar, salt, and pepper to taste.
  3. Combine watermelon, red onion, cucumber, and arugula and toss with your desired amount of vinaigrette.
  4. Drizzle with balsamic to garnish.
