1 Seedless Watermelon
1 Cucumber (Diced Medium)
½ Cup Feta Cheese
1 Cup Baby Arugula
1 Red Onion (Thinly Sliced)
2 Tbsp Round Pond Red Wine Vinegar
¼ Cup Round Pond Estate Meyer Lemon Olive Oil
1-2 Tbsp Round Pond 13 Year Aged Balsamic
Salt/Pepper to Taste
Directions:
- Cut watermelon into small cubes. Vacuum seal to compress all the air out. Set aside.
- In a small bowl, mix together olive oil, red wine vinegar, salt, and pepper to taste.
- Combine watermelon, red onion, cucumber, and arugula and toss with your desired amount of vinaigrette.
- Drizzle with balsamic to garnish.
